Tammy’s sister Corinne and her husband Denny hosted a cookie decorating class. They made a hundred cookies ahead of time and had a variety of different colors of Royal Icing. Denny even had pages printed of patterns for us to learn the proper technique. His cookies came out incredibly nice.

I made the best pan of Toffee Bars I’ve ever made. These are a holiday favorite of mine. My Mom has made them for me many times. My Grandma Rose would always seem to have a pan of them when we would visit the Farm. Just six ingredients. This batch was perfectly firm but soft.

It is nearly Thanksgiving and the time I start to crave some lefse! I come from family where lefse was made from scratch and I’ve taken part in making it myself. We even have a lefse iron and proper turning sticks. My friend Patrick does it from scratch. But it is a lot of effort and a big mess for something that you can get in other ways. So I tend to buy my lefse instead. I happened to have two different lefse packages at home so I thought a comparison would be fun.

Freddy’s Lefse

Freddy’s Lefse is made in Fargo, North Dakota and they have been at it since 1946. I’ve ordered their lefse online multiple times and I really like it. They make a traditional round lefse that is very thin and has just the right chew to it. As an added bonus, you can splurge and get Freddy’s own mix of cinnamon and sugar in a nice shaker. Why would you do that when you almost certainly have sugar and cinnamon in the cupboard? The ratio they use to me is perfect and they seem to use a very finely ground sugar that works just perfect in the lefse.

Laura’s Lefse

I had never had Laura’s Lefse before but Tammy saw it in the store and got me a bag. I was super happy for it to be the first lefse of the season. Looking closer I couldn’t find any “Laura’s Lefse” online except for Walmart and Sam’s Club website. I looked closer and the product is made in Gonvick, Minnesota so I looked for lefse in Gonvick and sure enough Mrs. Olson’s Lefse is there. Tellingly Mrs. Olson’s sells lefse in rectangular sheets just like this bag of Laura’s Lefse I have. Why does it get a different name for the retail stores? I have no idea. Reading about their company it turns out Laura was Mrs. Olson’s actual name.

As I mentioned this lefse is cut in a rectangle. It reminds me of buying sheet pasta for lasagna. I had never seen lefse prepared that way. It is also notably thicker than Freddy’s, and on the thicker end of lefse I’ve had. If you are using it for a savory snack that is a good thing. Rolling one of these sheets with a slice of ham and cheese would work very well. The weight of Laura’s (er, Mrs. Olson) is actually slightly lighter than Freddy’s but is a smaller size.

So which is better? They are both good but for a traditional lefse with butter, sugar, and cinnamon my preference would be Freddy’s. If you are making savory snacks I would use Mrs. Olson’s. And if you just want some darn lefse cause it’s so good? Either will be just fine.

We attended our first St. Olaf Christmas Festival at Orchestra Hall. This year was themed Love and Joy. This concert has been held since 1912. The mass choral arrangements with all 500 students were wonderful. Orchestra Hall was the perfect venue as well.

Today Tammy put together this years custom Christmas Puzzle that we made for her and it came out really well. It was definitely the hardest puzzle we have created yet. We titled it “Land of Things”.

We took a unique approach this year. Tyler and I have been having fun with Townscaper so I asked Tyler to create the overall base of the puzzle using Townscaper. He used the iPad and spent a while creating various islands and buildings. We thematically tied each location to houses and neighborhoods we have lived in. We also included our cabin as an island that you had to get to by boat.

After we had the scene in Townscaper I loaded the city on the desktop version of Townscaper in Steam because it could render it larger and export a higher quality image. Using a screenshot on the iPad wasn’t high enough resolution.

\n

I took that image and then we loaded it into Procreate and Mazie went to work drawing on top of it. We added grass, various scenes, decorated some things, a big sea dragon, etc. The details were really great.

Last year I decided I had enough of our old tree stand and got rid of it. We decided to pick up our Christmas tree after Thanksgiving but I needed to get a new tree stand.

We made a quick stop at Settergren’s Ace Hardware and I asked the guys there what they recommended. The guy I was talking to said he loved this Swivel Tree Stand. I decided to get it. It wasn’t the cheapest, but it looked really nice and easy.

We went to Wagner’s and got a tree, and then headed home to get it in the stand. After putting the tree up I won’t use one of the old tree stands ever again. This thing was amazing. You put part of the base on outside, with the tree in an easy place to put part of the base on. No laying on the floor trying to get everything put in place. Simple, easy.

You then walk it inside, set it in the stand, press the swivel lever down with your foot. At this point the tree moves anyway you want it. Get it perfect, let the lever release and your done! Wow. Great!

We could be bleak and blame it on the economy. We could be green and hightlight how much carbon we are saving by not sending out more cards and saving some trees while we are at it. We could also highlight that the trend seems to be that we only write a Christmas letter every other year. We had a letter in 2007 and 2005. The even years, 2006 and 2004, seem to fall short. But mostly, we just didn’t get one done and didn’t feel strongly about getting one out.

Most years at my mother’s office they invite family, and especially grandkids, to join the festivities at their holiday party. This year was at Bunker Park Stables for a hay ride! It was really cold, and we had some very off-key singing during our very cold 1-hour hay ride. Even with that, we all had a really good time.

I think the whole thing was saved by my sister bringing a sleeping bag for us to sit on, rather than sitting straight on ice!

Mazie greeted her 3rd Halloween with much excitement and anticipation. I think this is the first holiday that she has been really, truly excited about. She couldn’t decide if she was going to go with her Princess outfit or the Train Conductor. In the end she decided that her love of trains would prevail.

I don’t have New Year resolutions every year, but this year I figured what the heck. Looking back, while I didn’t call it a resolution, I did force a switch to Camera RAW for photography on January 2nd, 2006 and that was great. I have a few technology and Internet related resolutions that I thought I would share this year. Hopefully I’m as happy with these changes in a couple of years.

\n\"Postage\nThe time has come for this to be standard. This feels a lot like the\nCamera RAW resolution above. Not many people use digital certificates\nwith their email because it's generally a pain and complicated. But,\nwithout it email is like writing on a bathroom wall, in a really big\nbathroom. It's so wide open it is somewhat shocking. Digital\ncertificates solve this problem.\n

I have now enabled my OS X Mail with a digital certificate from Thawte and if you get email from me it will be signed. This isn’t universal since the iPhone at this point doesn’t sign messages, and I do occasionally have to resort to webmail. But if it’s from Mail.app it will be signed.

Go get your own certificate as well and we can even encrypt the message. There is a somewhat dated, but good explanation on doing this for OS X at Joar Wingfor’s website.

Tammy and I are both pretty shocked that we got a holiday letter out this year. It just sort of happened. Tammy started writing something and it just appeared. Tammy, Mazie and I all want to take a moment to wish everyone a very Merry Christmas and a great holiday season. You have possibly been checking your mailboxes eager to open the 2nd annual Thingelstad Christmas letter. The anticipation has been high, everyday eagerly looking forward to that postal delivery, only to be let down.

Well, unfortunately the post office isn’t to blame but instead we are. We never got it done. We held out hopes for a last minute “hail Mary” letter to be produced but it never happened. You can stop checking your mailbox with vigor and jeering at your postal carrier for not bringing you the letter. It isn’t coming.

I got to play Super Dad today and put together Mazie’s christmas present. December 3rd? Sure – she’s 18 months old – it’s Christmas! 🙂 Tammy and I got her a “kitchen thing” for Christmas and have coordinated with her Grandparents, Aunts, Uncles and other relatives to get presents that go along with it.

The kitchen came in 4 boxes, with lots of assembly required. Just a bunch of peices of wood. Tammy suggested that she put it together while I was in NY last week. I thought about that for a moment, and I didn’t like it. Assembling the “assembly required” Christmas present is a Dad job for sure – and I didn’t want to be deprived of my fatherhood rights.

I got a bit frustrated at the beginning. Not too frustrated though, I’m pretty sure my language was clean the entire time. I put every joint together with added wood glue. This thing will be around for generations to come. She is having fun with it and it will be nice for her to get her pots and pans and other accessories to go with it.

The holiday season is now officially upon us. We were at Southdale today and Mazie got her first picture with Santa! She didn’t have a lot of things on her list, but I clearly heard Santa mentioning something about the Teletubbies.

She had a great time today going around to different places and getting carried around by Mom and Dad. Such a cutie!

Santa’s little stand there had several print options, along with the option of getting a CD with the “Hi-Res Digital Photo” on it. I asked what resolution it was and none of Santa’s little helpers knew. They were shooting with a Canon Digital Rebel, so I asked if it was just native resolution of the Rebel. They figured yes. $26 later I have a CD with a 3.15 megapixel image on it. Now, that may be “Hi-Res” to some, but it’s practically a camera-phone in my book. Grrr…

We aren’t doing much exciting for the fourth this year. I really like fireworks but with Mazie being just under three weeks old fireworks don’t sound like a good idea. [Hint: Stillwater has the best fireworks around!] We had a classic 4th of July barbecue in it’s place. Barbecued bison burgers and baked beans. Yum!

Last week my mother came back from my grandparents farm with their computer. It had died, seemingly a terrible death, and I was going to see what magic I could let loose on it to bring it back. Mixed in with all of the computer junk was another item, my dear friend, the Christmas Bell.

\n

The Christmas Bell is a fixture at the farm at Christmas. The bell has been there for every Christmas I can remember. For the simple cost of two-AA batteries the bell plays synthetic Christmas jingles for hours and hours bringing delight to all. It also has a small lamp in the dome of the bell that pulses with the music.

\n

The bell has gone through some difficult times. A couple of years it was hanging in it’s deserved spot, by the phone in between the kitchen and the dining room, but was unable to play, victim of some shenanigans by my cousins and I no doubt. It fell several times and had broken apart only to be taped back together. The plastic next to the on/off button had melted. My uncle had even taken a soldering iron to it to bring it back to life once. It was the ultimate fighter, coming back to bring Christmas joy to all of us.

\n

I received the bell in rough condition. It had become three separate pieces. Stiff, loose wires broken from their mounts were the only remnants of the cheer it used to bring. I traced everything and identified where it all went, soldered the connections back and flipped the switch, however no sound emitted from my dear friend. He just laid there dormant. I wondered about the switch so I bypassed that, nothing still. I did notice that the single chip on the tiny board, its heart if you will, got very hot when it was on. I’m sad to say that my best efforts were not enough to bring him back.

I have respectfully placed him aside in the hope that future technology will be able to cure what ails this great, red bell.

I’ve now entered the world of digital video in addition to the digital photography one I’ve been in for some time. My wife was cool enough to get me the Panasonic PV-GS400 digital camcorder. This is a very slick 3CCD unit with more bells and whistles than I know what to do with at this time. It even takes 4 megapixel stills! I’ve been playing with it over Christmas, taking some really dumb video and realizing that it’s hard to fake your way through video production. 🙂

\n

Now this will of course spark a fury of other things I need to learn and play with including a better disk subsystem for my PC since moving those big video files around will be oh so slow. This is how it always works – fun!

\n

This present signifies my first “Dad Gift”. I am now fully equiped to stand with all the other geeky Dads spinning hours of video of their kids that nobody will ever want to watch other than them. I’m also very okay with this.

\n

Other Christmas gifts this year included a couple of Logitech wireless Xbox controllers (and they are great!), an awesome clay poker chip set, Six Feet Under Season 2, great books and numerous other fun things. Not to mention a lot of great time with friends and family. Can’t really ask for much more!

I lived in the Twin Cities for a number of years without anyone ever mentioning a thing about the fireworks in Stillwater. Maybe most people don’t know, but Stillwater has some amazing fireworks. It is on par with the best fireworks I’ve ever seen. The first time we saw them was 2002 when we ended up in Stillwater on a whim and decided to check them out. We both left thinking the show was awesome. I cannot remember off-hand why we didn’t go back last year, but this year we were able to enjoy them. They last a little under 30 minutes with music accompanying them. Adding to the fun are all of the boats that line up on the water to watch. There are thousands of people that line the shore and vendors even setup concession stands. Warning: getting an ice cream cone right before the fireworks can take quite a while! Anyway, highly recommended for your 4th of July planning in the future.

Two things really stood out to me though while I was doing some people watching before the event. Have you all realized that well over 90% of teenage girls are now wearing flip-flops and a decent proportion of their male counterparts as well. All these girls were walking by and essentially every single one (with minor exceptions) had flip-flops? Who finds these comfortable? Who would ever want to walk a mile in these things. And why are they all wearing them? Perhaps it’s some sort of flip-flop plot to cause some counter-insurgance in the country.

\n

The other thing I wondered is are more people smoking? Sure seems like there are more people lighting up lately than there were even two years ago. Have we gone completely insane?

\n

Of course, one could write-off both of these observations with my sample set. Perhaps both flip-flops and smoking are a craze exhibited only in pickup driving towns with teenagers overloaded with hormones. Perhaps. Or should I say I hope.
