I have installed Apple TV in my truck but it has been quite involved. I use it for music and for movies for the kids on a 15" screen in the back. The interface IS the biggest problem, second is the power supply, third the lack of composite video out requiring a converter. If they had built the Apple TV hardware like the MAC mini that would solve 2nd and third problem and like you say if they put the new ipod touch interface on it then you have the perfect car entertainment system. Actually all they need to do is package the iPod touch in a 1 din and add WiFi syncing and its done. ......In the meantime I need to install a smart power supply in the truck so the apple TV stays on in order to sync all the new movies I keep adding (which take forever).
